ABOUT OUR MEAT

How should I store your meat?
+
Our meat must be stored in a freezer. We recommend a stand-up/chest freezer.
I don't have a stand-up/chest freezer! How much do they cost, and where do I get one?
+
Cost and Sourcing:
• The cost of a new freezer will range from $200-$1000 depending on the size you need. Frigidaire is our favorite brand.

• Used freezers are typically 50% the cost of a comparable new freezer. They can be sourced on Kijiji, Facebook Marketplace, or your local Habitat for Humanity ReStore. We recommend purchasing a modern EnergyStar freezer!
What's the difference between a chest vs stand-up freezer?
+
Chest vs Stand-Up:
• Chest freezers (horizontal) are more storage efficient because it is easier to stack things without the risk of everything toppling out. They also use less energy because cold air sinks, so less cold air escapes when you open the door.

• Stand Up freezers take up less floor space and are easier to find things in.
Do you have any other freezer storage tips?
+
Tips:
• Buy the biggest freezer you have space for - they fill up quick!

• Remember that a half of pork and a quarter of beef each take up approximately 5 cubic feet.
Is it expensive to run a freezer year-round?
+
No! Given the high energy efficiency of modern freezers, it costs between $2-5* per month to operate a 5-25 cubic feet deep freeze. For the price of a cup of coffee a month, you can have an entire year's worth of food at the ready!

*Based on current capped rate for electricity of 6.8 cents per kWh
What kind of cuisine are your meat cuts best for?
+
If you aren't used to snout-to-tail cooking, here are 3 things you can do:

1. Sign up to our newsletter to get a free PDF download of our Organs, Bones & Fat recipe book! After your order is delivered, you are welcome to call, text, or email any "How To" questions from the kitchen. We have been cooking from nose to tail for years and can't wait for you to do the same.

2. Watch our video Why You Should Eat Organs Bones & Fat To Heal Yourself & The Planet from our blog.

3. For those looking for a more in-depth cookbook, we always recommend Sally Fallon's "Nourishing Traditions: The Cookbook That Challenges the Politically Correct Nutrition and the Diet Dictocrats." It is as good as the title is long! Essential reading material for those looking at taking back their food sovereignty.
Why eat snout-to-tail from a local permaculture farm?
+
How much time do you currently spend waiting in traffic, farmers markets, and checkout lines to buy your meat? Do you know what your yearly cost of purchasing individual cuts is? Do your farmers have an open-door policy so that you can personally know if your animals are raised and harvested humanely? Are you concerned about the toll industrial agriculture and food waste is having on the health of your family and the planet? Are those nutrient-dense fats, organs, and bones missing from your diet?

By purchasing your grass-fed beef and milk-fed pork directly from our farm, you'll receive custom-cut, nutrient-dense, humanely raised and harvested meat for less than the price of buying the same feedlot-raised cuts from the average grocery store.

Imagine being able to get beef or pork from your own freezer anytime you want, just the way you want it. Plus, you will be contributing to our mission of regenerating the health of our planet. Oh, and if you aren't satisfied with your grass-fed beef or milk-fed pork for any reason, we will buy it back. No questions asked.

ABOUT OUR FOREST GARDEN

What is a Forest Garden?
+
A forest garden is an orchard designed to mimic the form and function of a forest ecosystem. We planted our 6-acre forest garden comprised of over 50 different species & varieties of perennial fruits, berries, and nuts that are arranged spatially to mimic the natural form and function of a forest. Now, this ecosystem is sequestering carbon, capturing snow, providing habitat, slowing winds, purifying water all while producing nutrient-dense food!
Why does Coen Farm have a Forest Garden?
+
We live in the Aspen Parkland Biome where our natural ecosystem consists of groves of poplars and spruce trees with a variety of understory perennial shrubs, vines and ground cover species. Rather than expend huge amounts of time and resources to fight it, we mimic our native biome to achieve its true potential. What if we swapped poplar, birch and box elder for apples, pears, cherries, plums and apricots? This way, our forest garden can sequester carbon, provide habitat for wildlife, and produce nutrient-dense berries and herbs for our teas.
